It all started with my urban nomad self’s curiosity: what’s this growing from the cracks of the pavement and along the road? At first the wild fruit, sloe, forest berries, wild morellos … next the wild herbs and wild vegetables: ground ivy, lemon thyme, water cress … finally to round it off there were the blossoms: violets, cowslip, and white bear’s leek blossoms or pink wild oregano …
Increasingly what had been picked along the way became reason to venture into the woods and fields for more of nature’s treasures.
Then there was my fancy with high quality delicacies. And the longing to work by hand and not just with the head. This is how my searching mind and love for the sweets craft began: what would be the most aromatic blossoms? How to candy violets? How to blend woodruff with the chocolate and match the cornel cherry with the marzipan?
